In addition to meeting the requirement of Item No. 401, the skin and fat on the outside of the leg must be trimmed. The skin shall be excluded anterior to a straight line parallel to the leg face, which starts at a point that does not exceed 25 percent of the distance from the stifle joint to the leg face. The fat that is exposed shall be trimmed so as not to exceed 0.5 inch (13 mm) in depth at any point which is 1.5 inches (3.8 cm) or more from the skin edge, except at the tail end of the pelvic area where the fat thickness shall not exceed 1.0 inch (2.5 cm).
