Outside is a cut consisting of the Flat and the Eye Round. The Heel Muscle (M. gastrocnemius), popliteal lymph node, surrounding fat and connective tissue are removed.
Points requiring specification:
· Fat cover.
·Thick connective tissue (silverskin) on ventral side removed.
